  • Grate 1 whole papaya..
    In a kadai add 1tspn refine oil..
    Then add mustard seeds,curry leaves,kaju,kismis…
    Fry it for 1 min..
    Add grated papaya,sugar,lil salt..
    Stir n mix it well… Then add 1 lemon juice, n 1 tspn honey…
    After 5 min, switch off d gas n decorate it wid coriander leave…

    Add a lil salt to it..

    Dahi Baingan(Without Frying Baingan)

    Hi Friendz
    One healthy point is that in this recipe generally baingan or brinjal is deep fried but without deep frying also you get the same taste and flavor
    Now coming straight to recipe part
    Prearation Time 15 min
    Cooking Time 20 min
    Serving Persons 4
    Ingredients Required
    1 big brinjal cut into thin slices
    2 cups thick curd
    !/4 tsp turmeric powder
    1 tsp red chili powder
    4 tbsp sugar
    1 tbsp mustard oil
    2 tsp cooking oil
    1/4 tsp mustard seeds
    1/4 tsp cumin seeds
    1/2 tsp udad daal
    1/8 tsp sounf
    4-6 fenugreek seeds
    a pinch of asafoetida powder
    Salt to taste
    1 whole red chili
    2 green chili slited
    1/2 tsp degi mirch powder
    For Garnishing
    2 to 3 string of curry leaves(12 to 14 curry leaves)
    cumin n rec chili crushed powder


    Cut the brinjal into thin slices…as I have not deep fried this so I cut into little thin slices…
    Now add turmeric powder ,1/2 tsp red chili powder,salt to this and mix well.
    Now heat tava and spread mustard oil.(Keep the flame High)
    Muastard oil and brinjal just heavenly combination.
    Now put the masala coated brinjal.
    Now shallow fry this till it turns golden color and crispy from both sides.(while shallow frying make the flame Low).
    As it finally goes and mix with dahi or curd…so I feel no need to deep fry this.
    Whisk the curd properly so that no lumps will be there.
    Add red chili powder,salt,sugar to the curd and mix well.
    Add the crispy brinjals to this and smoothly mix it.
    Now heat cooking oil and add mustards seeds,cumin seeds,udad daal,fenugreek seeds,sounf,whole red chili,green chili and asafoetida powder.
    When mustard seed start crackle and udad daal turns golden color,just add degi mirch powder to give color to the dish.
    Now add this tempering to curd mixture.
    Sprinkle crushed cumin and red chili powder and garnish with curry leaf strings.(Pluck from our home garden full of refreshing)
    Notes :
    While adding the masala to the brinjal slices if you feel it is little dry just sprinkle little water so that all masala get well coated on all slices.

    Take fresh green little Mangoes, and cut it small pieces. Take these small pieces in a bowl, add some sugar, Salt, Green chili, Mango Ginger, Coriander leaves.

    Reciepe of sambalpuri dahi ambilaa.


    1.Vegetables needed.-radish,okara(bhindi),pumpkin (yellow and ripen),yam(kachhu/saaru).
    3.besan/rice flour1tbs
    4.dried mango(ambula)
    5.haldi powder1/2tsp
    6.salt to taste
    Ingrediants for chhonk..pamchforan,curry leaves lehsun,dried chilli,pinch of hing.


    First of all wash and cut the veggies in big pieces.
    N.P-Some veggies may be used as wish but yellow pumpkin,bhindi,radish must be put in it.
    Boil the veggies in two cups of water put salt to taste and haldi powder in it.Let the veggies halfboiled .Take half a cup of thik and sour dahi bit properly .put rice flour/besan and half cup water again bit properly as no lumps should be there pour it in half boild veggies.if dahi us not sour then put dried mango(ambula)and tomato to get sourness.Let all the ingredients boil properly put some dhania patta and half tsp of suga.Then take the vessel frm d flame and put another kadai yo prepare chhonk.Put 11/2tsp of oil .put crushed lehsun,panch foran,curry leaves,dried chillis,pinch of hing.Let all ingredients fried properly put the chhonk into the prepared ambilaa and cover the vessel.Here is ready the Delicious Sambalpuri Ambila.

    Boil dal 3 cup
    Onion big chunks
    Tomato 3
    Spinach 3 cup chopped
    Mustard seeds 1/2tsp
    Sarson 1tsp
    Chilli dried 5
    Curry leaf
    Hing 1/2tsp
    Salt as per tst
    Sambar pwdr 4tsp
    Oil fr tempwr
    Tamerind pulp 4tbs


    In a kadhai add oil, then add methi ,sarson,chilli,hing,and curry leaf then add onion fry till 2mins.
    Now add tomatoes then fry till its get cooked,
    Add haldi,sambar pwdr.
    Fry for 10sec then add spinach when spinach lv water add boil dal along with salt and tamarind pulp. Boil it for 2 min then serve hot.

    Ladies finger, curry leaves, turmeric powder, coriander powder, cumin powder, red chilly powder, fennel seeds powder, mustard seeds, cumin seeds, green chilly, oil, salt, curd.


    Cut the ladies finger in two pieces
    Heat some oil in a pan add mustard seeds, cumin seeds and 1 pinch of hing powder,
    Now add some curry leaves and long cut green chilly
    Fry it then add turmeric powder, coriander powder, cumin powder, red chilly powder, add with some water and fry it 3 minutes
    Now add the ladies finger and some salt of your taste fry it 5 minutes
    Now add 2 cups of curd into the pan
    Now add 1tbsp of fennel seeds powder mix well and cover it.
    Cook it 7to8 minutes on low flame. Then serve it.

    1 cup dahi,whipped
    5tbsp of besan
    3cups of water
    2 pinch of hing
    3 red chillies
    1/4 tsp of rai
    1/4 tsp of jeera
    Few curry leaves
    1 tsp of ginger garlic paste
    1/2 tsp of sugar
    1/2 turmeric powder
    2 tbsp of ghee
    2 tbsp of mustard oil
    A pinch of methi Dana
    2 cup of methi leaves finally chopped
    1.Heat oil- add jeera rai and red chillies ,hing and let it splutter
    2.Add ginger garlic paste and Saute for a minute
    3.Add cleaned and washes n chopped methi leaves.Fry for 3-4 minutes.Add sugar to it.( This is the trick ,methi will not get bitter)
    4.Whip dahi n besan together,mix well . Add turmeric powder to it.add salt and water.mux well
    5.Add this mixture to the methi mix.
    Stir for 5 minutes till besan gets cooked .
    6.Make tadka of ghee, add curry leaves n methi Dana and detach off the flAme . Add a pinch of red chilli powder n pour over the kadhi..

    2- 2 tsp of mustard paste
    3- 3 red chillis
    4- 1 tsp of punch phutan
    5- curry leaves 9-10
    6- 2 tsp of oil
    7- 1/2 tsp of grated ginger
    8- 1/2 tsp of grated mango ginger (amba ada)
    9- 3 tsp of grated coconut
    10- 1-2 tsp of Jeera and red chilli powder (fried)
    11- 3 tsp sugar
    12- 1 cup of yogurt
    13- Salt (as per taste)

    *Soak the ambula in water for 2hr.
    *Then take the kadai
    *Heat oil, then add red chilli and punch phutan in to it.
    *When it starts spluttering then add grated ginger.
    *Then add soaked dry mango into it.
    *After 2-3 minute add mustard paste into it & put some water.
    *After 1-2 minute add sugar into it.
    *Then add some salt & keep the flame in medium.
    *Then leave it for 15 minutes.
    *Then add grated coconut, red chilli and Jeera powder into it and leave it for 2-3 mins.
    *Then add curd & mango ginger, mix it well.
    Now Dahi Ambula Khata is ready
